3100 Cellars is Idaho's only dedicated sparkling wine house, producing world-class traditional method sparkling wines from their estate vineyard, Finca Besada, in the Eagle Foothills AVA. Inspired by Idaho's whitewater rivers, the winery began in 2014 with wines aged on average 3 years or longer. They offer tastings by appointment at their vineyard property which also serves as the winery and tasting room.
