Rolling Meadows Brewery is a farm-based, family-owned production brewery established in 2011 by Caren Trudeau and her son Chris Trudeau, along with Connie and Dustin Regan. They craft handcrafted beers like Lincoln’s Lager, Springfield Wheat, and Abe’s Ale using resources from their family farm. Beers are distributed to bars, restaurants, liquor, and grocery stores in Central Illinois; the brewery is not open to the public but offers scheduled tours and events.
