Osocalis Distillery, founded by Daniel Farber in Soquel, California, produces unique, non-reproducible spirits distilled from rare grape varieties and over 50 traditional French cider apples grown in the Santa Cruz Mountains. Using a traditional Alambic Charantais still and meticulous barrel maturation in custom cellars, they emphasize terroir from Purisima Formation soils, dry-farmed orchards, and a philosophy of excellence converging viticulture, winemaking, and distillation. Spirits are hand-blended from multiple timelines and properties, bottled in limited releases.
