Fish Hawk Spirits is Florida’s only medal-winning farm-to-bottle ultra-premium spirits distillery, established in 2012 in Ocala as the fifth licensed distillery in the state. They produce a portfolio of 27 spirits across the Sui Generis whiskey family, Resurgence rum family, Island Grove vodka family, Absinthia absinthe family, and Colonial brandy family, using locally grown corn, fresh fruit, herbs, and spring water from the Rainbow River watershed. The distillery operates from a farm shed with hand-built stills and offers on-site tours.
